We have selected premium global gins and paired them with quality Fever Tree tonics, serving them over custom crystal-clear ice.

  • Copper Spirit Harmony + Elderflower

    This deliciously unique organic Gin is made locally on Bowen Island. Along with 13 wild foraged botanicals, German copper stills help create a soft, well refined and herbaceous Gin strongly representing West Coast flavors. Notes include: Cardamom, black pepper, lavender, pine and citrusy juniper.

  • Roku Sakura Bloom & Indian

    From the storied Japanese House of Suntory. This limited release is inspired by ‘Hanami’ the tradition of seeing Sakura in full bloom. Using both Sakura flower and Sakura leaf along with its core botanicals of yuzu peel, sencha, and sancho pepper, adding a floral saltiness This Gin is then put through a proprietary bamboo charcoal filter, eliminating impurities while adding a delicate sweetness to the finish. Notes include cherry blossom, yuzu peel, orange, green tea and sansho pepper

  • Martin Miller’s + Indian

    Born and distilled in Notting Hill, London. Once distilled this gin is transported 3,000 miles to the shores of Iceland, where the purest arctic water is found. The water itself comes form 800-year-old snow fall, being filtered through hundreds of meters of volcanic rock. This achieves a clean, bright and creamy mouthfeel. Notes include Citrus, cinnamon, nutmeg, coriander and orange.

  • Bareksten + Mediterranean

    Distilled in Bergen, Norway. This stunning potato Gin has a full, round mouthfeel. Using 26 botanicals predominately sourced from Norwegian forests. You can taste the undertones from the delicious dark berries and herbs from the forest floor, complimenting the floral notes of chamomile and elderflower. Notes include citrus peels, caraway, juniper, elderflower, mint and pine

  • Sipsmith + Indian

    Opening in 2009 Sip Smith became London’s first new copper distillery in 189 years. Distilled in only 300-liter stills, this required the founders to petition for change to a century-old excise law. Notes include juniper, orange marmalade, lemon tart, subtle spice and a creamy finish.
